Day 4: Butchery - pork tenderloin, pork rack, lamb leg, lamb saddle, beef tendeloin ; chateubriand, meddalion, tips
Day 5: Seafood - flat fish, clean and fillet; round fish, clean and fillet ; processing squid ; processing shrimp ; open oysters
